If you've ever browsed the mushroom supplement aisle and wondered why some products cost $15 and others cost $60, you're asking the right question. The answer usually comes down to one word: extraction. Not all mushroom products are made the same way, and the difference between a raw mushroom powder and a properly made extract is not cosmetic. It affects whether the compounds you're looking for can actually be absorbed by your body at all.

This post walks through exactly what mushroom powder is, what extraction does, why the distinction matters, and what to look for on a label so you're not guessing.

The Problem with Whole Mushroom Powder

A mushroom powder is exactly what it sounds like: dried mushroom material that has been ground into a fine powder. Nothing has been removed, concentrated, or chemically altered. In that sense, it is the most "natural" form of a mushroom supplement.

The trouble is that mushrooms have cell walls made of chitin, the same tough fibrous material found in the shells of crabs and shrimp. Humans do not produce chitinase, the enzyme required to break chitin down, which means that when you consume raw mushroom powder, a significant portion of its beneficial compounds stay locked inside the cell wall and pass through your digestive system largely intact.

This is not a minor issue. The bioactive compounds that researchers have focused on, including beta-glucans, triterpenes, hericenones, and erinacines, sit inside or are structurally associated with the chitin matrix. Without breaking that matrix open, the body has limited access to them.

A 2023 review published in Molecules confirmed that medicinal mushrooms including Lion's Mane (Hericium erinaceus), Reishi (Ganoderma lucidum), Chaga (Inonotus obliquus), and Cordyceps are characterized by biologically active compounds including (1,3)(1,6)-beta-D-glucans, triterpenes, and phenolic compounds. What Extraction Actually Does

Extraction uses heat, water, alcohol, or a combination of both to break down the chitin cell wall and draw out the bioactive compounds into a concentrated, bioavailable form. The resulting extract is then typically dried back into a powder for use in capsules or as a loose powder.

There are two main solvents used, and they capture different classes of compounds.

Hot water extraction targets polysaccharides, particularly beta-glucans. These are water-soluble compounds that require heat to be released from the chitin matrix. Simmering mushroom material in water at around 80 to 90 degrees Celsius for several hours dissolves these compounds and makes them available in the final product. Hot water extraction is effective for most mushroom species and is the minimum standard for a product that claims immune or gut health benefits based on beta-glucan content.

Alcohol extraction targets fat-soluble compounds that water cannot reach. Triterpenes in Reishi, sterols in Chaga, and certain phenolic compounds all require an alcohol solvent to become accessible. Alcohol alone, however, is not effective for beta-glucans. In fact, beta-glucans can precipitate out and be lost during alcohol filtration, which means a product made with alcohol extraction alone may be missing the immune-supporting compounds it advertises.

Dual extraction combines both methods, typically performing a hot water decoction followed by an alcohol soak (or vice versa), then combining the two fractions. This approach captures both water-soluble polysaccharides and fat-soluble triterpenes in a single product. For species like Reishi, Chaga, and Lion's Mane, which contain meaningful amounts of both compound classes, dual extraction provides the most complete profile.

Why Beta-Glucans Are the Benchmark

When evaluating a mushroom extract, the beta-glucan percentage on the label is the most meaningful number to look for. Beta-glucans are the class of polysaccharides most studied for their effects on immune modulation, and they are the primary reason researchers and practitioners focus on extracted mushroom products rather than raw powders.

A 2025 review in Applied Biological Chemistry (Springer Nature) confirmed that mushroom beta-glucans act as prebiotics with measurable effects on gut microbiota and metabolic health, but emphasized that efficacy depends heavily on bioavailability, solubility, and molecular weight, all of which are directly affected by extraction method. A high-quality extract from 100% fruiting body material typically contains 25 to 40% beta-glucans. Many mycelium-on-grain products, where the mushroom mycelium is grown on a rice or grain substrate and the grain is included in the final powder, test at 1 to 5% beta-glucans, with the remainder being grain starch. Those products may list "polysaccharides" on the label, which is a broader category that includes starch, rather than specifying beta-glucan content. This distinction matters.

What Science Says About the Specific Compounds

Understanding the compound classes also helps explain why extraction method matters for specific mushrooms.

Lion's Mane is the most extensively researched species for cognitive and neurological support. Its benefits are attributed to two distinct compound classes: hericenones, found in the fruiting body, and erinacines, found primarily in the mycelium. A 2023 study published in PMC found that both hericenones and erinacines can cross the blood-brain barrier and have demonstrated anti-neuroinflammatory and neuroprotective properties in animal models, with a growing body of human research exploring cognitive and mood benefits. Hericenones are terpenoids that require alcohol extraction to be fully liberated from the cell wall. Erinacines are also fat-soluble. This means that a Lion's Mane product made only with hot water extraction may contain good beta-glucan levels but will have limited terpenoid content. A dual extract captures both fractions.

Cordyceps militaris, the cultivated species used in most commercial supplements, has been studied for its beta-glucan content and its role in reducing pro-inflammatory markers. A peer-reviewed study published in PMC demonstrated that the aqueous and hot water extracts containing its polysaccharides, particularly beta-(1,3)-D-glucan, showed the most significant anti-inflammatory activity. For both species, the active compounds are simply not meaningfully present in a raw powder product. This is not a marketing claim. It is a function of chemistry and cell wall biology.

What Fruiting Body vs. Mycelium Means for You

A second important distinction beyond extraction method is whether a product uses fruiting bodies or mycelium as its source material.

The fruiting body is the visible mushroom: the cap, stem, and spores. This is the part of the organism that has been used medicinally for centuries and is the material referenced in most of the clinical research. Fruiting bodies are naturally richer in beta-glucans and in the terpenoids associated with specific benefits.

Mycelium is the root-like network that grows through substrate. Commercially, mycelium is often grown on grain, and the grain is included in the final powder because separating it completely is difficult and costly. The result is a product with significantly diluted active compound levels, particularly beta-glucans, and elevated starch content from the grain.

A product label that reads "100% fruiting body" and lists a verified beta-glucan percentage is telling you something specific and verifiable. A label that says "proprietary blend" or lists only "polysaccharides" without a beta-glucan figure is telling you much less.

What to look for on a label: 100% fruiting body source. Verified beta-glucan percentage (typically 25% or higher for quality extracts). A stated extraction method (hot water, dual extract). No grain fillers listed in the ingredients.
